Romoosh el sett means “the lady’s eyelashes”, this is a sweet dish and very popular in Aleppo, due to the existence of semolina in the ingredients which give it a crunchy, sandy texture.
Romoosh el sett should be dunked in sugar syrup and supposed to be shaped like an eye with eyelashes.
Ingredients:
1- 1.5 cup flour.
2- 1/2 cup unsalted butter- room temperature.
3- 1/2 cup powdered sugar.
4- 1/4 cup finely grated coconut flakes.
5- 1/4 cup coarse semolina.
6- 1 large egg.
7- 1 tsp Baking powder.
8- a dash of salt.
Instructions:
1- Cream butter and sugar.
2- Crack the egg ,add the vanilla then mix very well.
3- In a separate bowl, mix the rest of the dry ingredients together.
4- Then add to the butter mixture and mix until you have nice soft dough.
5- Roll into a ball, press the ball a little to flatten. Then make some lines using a fork.
6- Bake in a 350F for 10-12 minutes or until the bottom is lightly brown.
7- Dunke in the sugar syrup.
