Zucchini with tomato

Ingredients

    1kg zucchinis

    5 medium tomato

    2 Tb tomato paste

    3Tb olive oil

    1 small onion

    1 cup of water

    Salt, black pepper, cumin, and ground coriander

     Chives and pepper for garnish

Instructions

    1-Peel, and cut the zucchinis into cubes.

    2- Cut two tomato into cubes

    3- Cut the onion into wings.

    4- Saute the onion with olive oil for in a skillet on medium heat, until

        becomes tender and translucent.

    5- Add diced tomato, and zucchinis, and stir them, then add grated

       tomato, and tomato paste, water, and stir them.

    6- Now add black pepper, cumin, salt and ground coriander

    7- Garnish with pepper and Chives

    8- Serve it hot.
