Ingredients
1 small onion, minced
4 cups mixed frozen vegetables, such as corn, carrots and green beans
1/2 teaspoon dried dill or tarragon
Salt
1/4 teaspoon freshly pepper
1 tablespoon olive oil
Preparation
1- Heat oil in a large skillet over medium heat.
2- Add onion and cook, stirring, until softened, about 1 minute. Stir in frozen vegetables. Cover and cook, stirring occasionally, until the vegetables are tender, 4 to 6 minutes.
3- Stir in tarragon, salt and pepper and serve.
