Chicken with Chili

Ingredients

5  boneless skinless chicken breasts or thighs, cut into small pieces

1 onion, chopped 

6 cloves garlic, finely chopped

4 cups chicken broth

6 cups water

1 cup dried beans, sorted, rinsed

2 cans chopped green chiles, drained

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon dried oregano leaves

1 teaspoon ground red pepper

Olive oil

1 cup shredded cheese

Sliced green onions, if desired

Preparation

1- Heat oil in a skillet over medium heat. Cook chicken, onion and garlic in oil 8 to 10 minutes, stirring occasionally, until onion is tender and chicken is no longer pink in center. Spoon mixture into cooker.

2-Add water, chicken broth, beans, green chiles, chili powder, cumin, oregano and cayenne pepper to slow cooker; stir to combine.

3-Cover; cook on Low heat setting 7 to 8 hours. Sprinkle individual servings with cheese and green onions.

4- Serve hot.
