Potato Omelet

Ingredients

2 medium potato, peeled and diced

6 eggs

4 tablespoons olive oil

1 medium onion, sliced thinly

1 teaspoon chopped fresh parsley

Chopped spring onions, for garnish

Pepper, to season

Salt

Preparation

1- Boil potato until partially cooked, about 1 to 2 minutes. Let cool. Peel, cut into quarters, then slice thinly. Set aside.

2- Beat eggs in a bowl and season with salt and pepper. Set aside.

3- Heat 1 tablespoon oil in a frying pan. Add onions and sauté until translucent. Add potatoes and cook until lightly browned. Season with salt and pepper. Add parsley.

4- Add sautéed potatoes to the beaten eggs. In a frying pan, heat remaining oil and add egg mixture. Cook over medium-low heat cook until tender. Fold egg over and transfer to a serving platter. Cut into wedges and garnish with chopped spring onions, and serve.
