Chickpea Soup

Ingredients

1 onion, chopped

1 clove garlic, minced

 1 green bell pepper, chopped

 5 button mushrooms, chopped

1/2 teaspoon dried oregano

1/2 teaspoon dried parsley

½ teaspoon dried basil

1 pinch crushed red pepper flakes

1 can tomato sauce

Olive oil

1 can garbanzo beans, drained

4 cups water

Preparation

1- Combine the olive oil, onion, garlic, bell pepper, mushrooms, oregano, parsley, basil and red pepper flakes in a large saucepan over medium heat.

2- Saute for about 5 minutes, or until onions are tender.

3- Add the tomato sauce, chickpeas and water. Reduce heat to low, cover and simmer for 30 minutes.

4- Serve hot.
