Ingredients
3 cups grated carrots
2 tsp minced fresh ginger
1/2 tsp salt
Freshly ground pepper, to taste
2 tsp oil
Preparation:
1- Heat oil in a large skillet over medium-high heat.
2- Add carrots and ginger; cook, stirring often, until wilted, about 2 minutes. Stir in orange juice and salt; simmer, uncovered, until the carrots are tender and most of the liquid has evaporated, 1 to 2 minutes.
3- Season with pepper and serve.
