Bulgur and Meat with Tomato Sauce

Ingredients

300g meat

1/2 zucchini

1 red bell pepper

400g peeled tomatoes

1 onion

Salt & pepper

1 tbs dried mint

Chopped coriander

2 cloves of garlic

1 tsp of cumin

1tsp paprika

125g goats cheese

Olive oil

Preparation

1-Wash and chop zucchini, bell peppers and onions.

2- Saute onion and red peppers in a pan for 1-2 mins then add the zucchini. Fry for another 1-2mins till all vegetables are soft. Transfer vegetables onto a clean plate.

3- Add a little more oil to the pan, together with the chopped garlic and minced meat. Fry till meat is almost cooked

4- Prepare the bulgur. Put half a cup of bulgur and pour hot water over it, and let it sit till water is absorbed

5- Add the vegetables back into the pan and pour peeled tomatoes and the rest of the seasoning (salt, pepper, cumin, paprika). Add bulgur into the pan and simmer for about 10mins.

6- Serve with crumbled goats cheese on top.
