Potato Makmora is dish from Horan and southern Syria, it is named thus because of the special way it is Covered, they put the lamb, potato and onions in a pot of clay and cook it in a slow and simple way.
Ingredients:
1- Four lamb shanks
2- Two potatoes
3- One onion
4- Four carrots
5- Chicken stock 150 mls
6- Salt and pepper to taste
7- Allspice 1tsp
Instructions:
1- Start by roughly chopping the onion. Peel carrots and potatoes and cut into one inch cubes. Then into the clay pot. Onions at the bottom, lamb shanks, carrots and potato. Pour the chicken stock season generously with freshly ground black pepper and rock salt. Generously sprinkle the allspice over the meat and potatoes. Cover and into a cold oven.
2-Start the oven on 200c. After twenty minutes I turn in down to 165c and cook for three and a half hours.
