LAMB KORMA

INGREDIENTS

((A))

1 teaspoon Chili Powder

2 tablespoon Cumin Seeds

2 tablespoon Coriander Seeds

1 tablespoon Mustard Seeds

Salt to taste

1 tablespoon Garam Masala

1 tablespoon Amchoor (dry mango Powder)

1 teaspoon Chilli Flakes

1 teaspoon Whole Black Peppercorn

1 teaspoon Cloves

2-3 Star Anise

2-3 Whole Black Cardamom

2-3 Dry Bay Leaves

2-3 Small Cinnamon sticks

 

1 teaspoon Ginger

1 teaspoon Garlic

1 Cup Yogurt

1Kg Lamb on the bone

2 Large Onions

2-3 Cups Water

1.5 Cup Oil

 

Preparation:

1. Grind all the ingredients in ((A)) to a powder

2. Add meat in a bowl and rub with the powder, making sure its fully coated

3. Next add the ginger garlic paste and mix well making sure meat is fully coated

4. Cover and leave in fridge to marinate for 3-4 hours – overnight works best

5. Chop the onions

6. In a pan heat the oil and add the onion – we need to brown them

7. Remove to a kitchen towel once brown

8. Crush with hands once all are done

9. Remove the meat from the fridge

10. In the same pan add the meat and fry till it’s got a nice brown color

11. Next add the fried onion and mix well

12. Add water and let the meat simmer till its soft

13. Remove off heat, let it cool for 5-10 minutes and then add the yogurt

14. Return to heat

15. Cook for another 10-15 minutes

16. Remove and serve immediately
