Ingredients
3 anchovy fillets chopped
1 cup diced seeded tomatoes
5 Tomatoes
1 clove garlic, chopped
1/3 cup chopped fresh flat-leaf parsley
1/4 cup chopped celery leaves
2 tablespoons packed chopped fresh basil
1 tablespoon vinegar or a squeeze of lemon
Olive Oil
1/4 salt
Pepper to taste
Preparation
1-Put the rinsed anchovies, garlic, parsley, celery leaves and basil in a food processor.
2- Pour boiling water over the tomatoes and remove them after 30 seconds. Peel them with a sharp knife and cut into quarters, scoop out the seeds.
2-Add oil and vinegar; pulse until blended. Transfer to a bowl and stir in tomatoes.
3-Season with salt and pepper.
