Ingredients
500 g pasta
1/2 cup olive oil
1/2 large cauliflower, cut into small florets
5 garlic cloves, sliced
2 long red chillies, thinly sliced
1 cup frozen peas
1/2 cup grated parmesan or any hard cheese
Basil leaves
Salt
Preparation:
1-boil the pasta in a large saucepan of water and salt.
2-Drain, reserving 1/2 cup of the cooking liquid.
3-heat the oil in large deep frying pan over medium-high heat. Add the cauliflower. Cook, turning occasionally until golden.
4-Add the garlic and chilli. Cook for 1 min or until garlic starts to brown
5-Add the pasta, peas and half the parmesan.
6- Cook for 2 mins or until peas are tender. Serve topped with basil and remaining parmesan.
