Ingredients
4 medium green pepper
3 tomatoes, peeled, cut into halves and seeds removed
1 tablespoon fresh parsley, finely chopped
3 tablespoons lemon juice
3 tablespoons olive oil
1 teaspoon cumin
1 teaspoon salt

1. Grill the peppers until roasted then peel and cut them into cubes.
2. Cut the tomato halves into cubes then place them in a bowl with the green peppers. Flavor with cumin, salt, oil and lemon and mix well.
3. Sprinkle with parsley and serve cold.
