Meat and Potato Stew

INGREDIENTS

1  kg leg of lamb, cut in cubes

2  onions, chopped

2  large tomatoes, peeled and diced

1  kg potatoes, peeled and cut into 4 pieces

2  tablespoons vegetable oil

1  clove garlic, crushed

2  tablespoons tomato paste

baharat mix

salt to taste

1  pita bread, deep-fried cut into pieces

parsley for garnish

pickles for serving

Cooking method according to shahiya.com

1- In a deep pot, fry onions in the vegetable oil on medium heat, until they are golden.

2 Raise heat, add meat and stir.

3 When meat browns, add the baharat mix, garlic and salt.

4 Add potatoes, tomatoes and tomato paste. Cover, and simmer on medium-low heat for 2 hours.

5 To serve, place the fried bread in a serving dish and top with meat and potato stew, then sprinkle with the chopped parsley.
