Muhamara (Walnut Dip)

Ingredients

•   1 cup coarsely‐ground walnut

•   1 cup plain breadcrumbs

•   1 big red pepper (use chili or sweet one)

•   1/4 cup olive oil

• 2  pounds cut green beans

•  8 cloves garlic

• ½  pound ground beef

•  1 can (14 oz) diced tomato

•  1/2 cup water

•  2 tablespoon vegetable oil

samaka harra (Chili Fish)

Ingredients

  • 1 cleaned whole fish, cut lengthwise
  • 1 head  mashed garlic
  • 1 1/4 cup chopped walnut
  • 1 cup chopped sun-dried (or roasted) red bell pepper
  • 1/2 cup olive oil

For the rub:

  • 1 teaspoon dried ground cilantro
  • 1 tablespoon Bharat (Syrian Spice Mix)

Ardi Shoki blahmi (Stuffed artichoke hearts)

Ingredients

  • 2 pounds artichoke hearts (can also be found frozen)
  • 1/2 pound ground beef or lamb
  • 1 medium onion, chopped
  • 1/3 cup peas
  • 1/2 cup mushroom, sliced
  • (peas and mushroom are optional. You can add your favorite small veggie to color the sauce)
  • 1 tablespoon lemon juice, optional
  • 3 tablespoons olive oil
  • 2 cups chicken or beef stock

Bamia (Okra Stew)

•   1 pound chopped stew beef

•   28 oz diced tomato

•   2 oz tomato paste

•   1 cup beef broth
