Zucchini and Rice with garlic and cheese


2 zucchini, shredded

1 cup shredded cheddar cheese

2 tablespoons unsalted butter

3 cloves garlic, minced

2 cups vegetable broth

1 cup rice


1/2 tablespoons black pepper to taste


1- Melt butter in a large saucepan over medium high heat. Add garlic, and cook, stirring frequently, until fragrant, about 2 minutes.

2- Stir in vegetable broth and rice. Bring to a boil; cover, reduce heat and simmer until rice is cooked through.

3- Remove from heat and stir in zucchini and cheese; season with salt and pepper, to taste.

4- Cover and let stand until cheese has melted, about 3-5 minutes.

5- Serve heat.
