Crispy Baked Eggplant


    1 large eggplant

    3 cloves garlic crushed

    1 tbsp. cornflour + 1/4c water slurry

    1 tsp. dried herb seasoning

    1/2 tsp. fried red chilli flakes




   1- Roasted the Garlic

    2- Slice eggplants thick pieces. Spread out on a tray and sprinkle salt on both sides. Let sweat for 10 minutes, dry with paper towels and set aside.

    3- Dip the dry eggplant slices into the cornflour slurry then press into the breadcrumbs. Make sure both sides are covered generously in the breadcrumbs.

    4- Place the coated eggplant slices in the prepared baking tray in a single

   5- Bake in a preheated oven at 200°C for 30 minutes. You can Increase temperature
