Eggplant with Ground Beef

Ingredients

1/2 kg eggplant diced

1  kg ground beef

4 cloves garlic minced

1 kg tomato chopped

 Salt

Olive oil

 ¼ teaspoon cinnamon and allspice

Preparation

1-peel the eggplant and  cut into medium-sized pieces

2-Sprinkle eggplant with salt and salute in olive oil until softened. Set aside.

3-  Cook ground beef with garlic, cinnamon and allspice until meat is browned.

4- Add eggplant and tomato to ground beef. Cook until liquid is reduced.

5- Serve alone or over cauliflower rice.
